How My Passion for Cheese Started

Hi, I’m Chris!

I’ll be honest, growing up in a Korean household, cheese, to my knowledge, was just Kraft singles and “shake cheese” (The “parmesan” in the green container). Maybe on occasion, sprinkles of “fancy cheese” at restaurants, but had no idea what it was.

But don’t get me wrong, there’s nothing wrong with processed cheeses, I usually have a stack of Cooper Sharp American in my fridge at all times!

But one day, I was walking through my local market and struck up a conversation with a very friendly cheesemonger, or as he preferred to be called, a cheese enthusiast. Next thing I know, I’m working part-time at my local cheese shop, and suddenly it’s been 10 years!

The thing I find most fascinating about cheese is the almost endless variety of options. How can such a small number of ingredients (milk, rennet, cultures, and salt) produce so many different variations in taste, texture, and smells?

It’s something that fascinates me to this day, and I’m constantly trying to learn more about it, and the fun part…trying out as many different kinds I can.

Safe to say, my fridge doesn’t consist of just processed American cheese, I now always have a mix of options. Ranging from a block of Parmigiano Reggiano, Locatelli, and my favorite of all time, Chebris, a mixed milk of goat and sheep’s milk from the Pyrenees.

There are endless options, and my aim to create this site is to help you find your next favorite cheese!
